Chinese cuisine is full of comfort food, but when it comes to warming winter eats nothing beats hotpot(火锅/huǒguō). In northern China, where the winters get bitterly cold, you see them everywhere on cold winter nights—hot pot restaurants, glowing in the darkness like real-life, happy friends and cozy couples, laughing around their hotpots as steam wreaths up and fogs up the windows like frost.

Hotpot(火锅/huǒguō) is a Chinese soup containing a variety of foodstuffs and ingredients, prepared with a simmering pot of soup stock at the dining table. While the hot pot is kept simmering, ingredients are placed into the pot and are cooked at the table. Typical hot pot dishes include thinly sliced meat, leaf vegetables, mushrooms, wontons, egg dumplings, tofu, and seafood. The cooked food is usually eaten with a dipping sauce.

In mainland of China, perhaps you’ve heard that the city of Chongqing 重庆 is world renowned for its hotpot (or at least, you have now) . When you come to try it though, what’s best to put in it? Maybe you should refer to the classic travel mantra, ‘Do as the locals do’. So what do Chongqing locals like in their hotpot?

The first answer, according to a new survey by a Chongqing hotpot restaurant company, is ox stomach(牛肚;niúdǔ), Followed by duck intestine(鸭肠;yācháng), thenbeef(牛肉niúròu), then goose intestine(鹅肠écháng), then sliced duck stomach(鸭肚;yādǔ). Or if those choices don’t take your fancy, maybe a large pig artery or 'duck blood jelly'(猪血zhūxuě;鸭血yāxuě) might.

These are all some of the favorite dishes of local diners. And they would seem to play to the Chinese stereotype of being fond of eating anything, including various organs of animals.

Happy Chinese Laba Festival 臘八節! Do you know Laba Festival is the day that Kicks off the Preparation for the arrival of the Chinese Lunar New Year?

Chinese Laba festival falls on January 24 in . Laba = 臘八. 臘La – is the 12th month on lunar calendar. 八 Ba – is the number 8. Laba is celebrated on the 8th day of the twelfth month on the Chinese lunar calendar.

Traditionally, on the day of Laba people will have 臘八粥 – Là bā zhōu = Laba congee or Laba porridge. Having Laba congee on this day is an over 1,000 year old tradition in China. It is also a day to share. In ancient time Chinese people would cook Laba congee to share with the poor because it was near the end of a year and many ran out of rice and grains for meals. 臘八粥 – Là bā zhōu is also called 八寶粥 – Bā bǎo zhōu = eight treasure porridge. It has the symbolic meaning of auspicious.

Are there 8 different ingredients in Laba congee? Not really. Laba day indicates the beginning of the preparation for the arrival of the Chinese Lunar New Year!

As a traditional Chinese festival celebrated by Han nationality, Laba Festival is regarded as the prelude to the Chinese Spring Festival. It falls on the eighth day of the twelfth month of Chinese lunar calendar (usually in January in Gregorian calendar). The twelfth month is called 'La month' and eight is pronounced as 'Ba' in Chinese. So, the festival is thus named. As people make and eat rice porridges to celebrate the day, it is named the Rice Porridge Festival as well.

Falling on the eighth day of the 12th lunar month, Laba Festival was originally an occasion for people to give sacrifices to their ancestors, and to pray to heaven and earth for a good harvest and good luck for the family. Many years later, it has become a Laba Congee eating event - a porridge that contains different types of rice, beans, dried nuts, bean curd, and meat.

The 12th lunar month is called 'La' in Chinese and eight is pronounced 'ba', which is how the name 'Laba' was derived. It is not only regarded as a day of sacrifice, but also the day on which Sakyamuni (founder of Buddhism) realized truth and became a Buddha.

It is said that Laba Congee originated from India. As the son of a king in the north of ancient India, Sakyamuni could not bear the local people's suffering from illness and the theocracy ruled by Brahman (one of the four Indian classes). As a result, he abandoned his lofty position and went out to seek a way to enlighten himself according to religious doctrine. After six years of enduring a very hard life and self-torture, he realized the truth of Buddhism while sitting under the bodhi tree on the eighth day of the 12th lunar month. It is remembered that during these six years, Sakyamuni only ate rice every day. So by eating porridge on the eighth day of the 12th month every year people commemorate him.

Sakyamuni is the son of Jinfan emperor in the ancient northern Indian. It is said that he couldn't bear the people's suffering from the diseases and was not satisfied with the rule of Bramins. A shepherd girl fed him with the porridge made with beans and rice. Sakyamuni was thus able to continue his journey. To commemorate this and remember his sufferings, people eat porridge to make offerings to the Buddha on the day every year.

Eating Laba Porridge Custom

The custom first originated in the Song Dynasty (960 - 1279) and became popular in the Qing Dynasty (1644 - 1911). Now it has been over one thousand years that the Chinese people eat Laba Congee on Laba Festival day. As is known to all, since ancient times Chinese people have attached great importance to growing crops, so when the land bears a good harvest after years of hard work, the farmers will show great appreciation by sacrificing to the ancestors, and heaven and earth. Boiling Laba Congee is one way people celebrate their harvest.

Ingredients of Laba Porridge

The ingredients of Laba Porridge are various items that are full of nutrition. It is made of diversified rice (glutinous rice, oats, corns etc.), beans (soy beans, mung beans, kidney beans, cowpeas etc.), dried nuts (chestnuts, almonds, peanuts, etc.), bean curd and meat. Melon seeds, lotus seeds, pine nuts, sugar, and other preserved fruits are added to give more flavors. After 10 centuries of development, there are now over one hundred different cooking methods.

After hours of boiling, the porridge is offered as a sacrifice to the ancestors and is presented to friends before noon. Family members eat Laba Porridge together and leave some, symbolizing a good harvest next year. Some kind people hand out the porridge to the poor to show their pity. And in some regions people believe that pasting porridge on the flowers and fruit trees indicates the blossom of flowers and good fruition.

Laba Porridge is now regarded as a very nutritious food in winter that has the function of strengthening the spleen, stimulating the appetite, and soothing the nerves. It is welcomed by all people of different ages.
